The Different Chais of India and Pakistan "Kashmiri Chai"

Ingredients:

2 cups water

2 tsp Temple of Heaven Green Tea EURO TE

2 tsp EURO TE Sencha Green Tea

9 cardamom berries, broken in a mortar

1 cinnamon stick (6 cm), chopped

½ tsp. Salt

¼ tsp. baking soda

1 cup cold water

2-3 tbsp. Sugar (the traditional recipe does not include sugar)

2-3 cups milk

1/2 cup Carnation milk (optional)

1 tbsp. Sliced ​​almonds

Variant

In some regions, the following is added to the above:

4 pcs. Jasmine flowers

1 pc. Star anise

4 cloves

Preparation:

1. In a large pot, heat water. Once it boils, add the cardamom and cinnamon. When it comes to a boil again, add the tea and salt.

2. Let it boil for 1 minute and add the baking soda.

3. Let it simmer over low heat for 15 minutes (reduce the water by half)

4. Add cold water and heat again for 1 minute

This preparation is called Kehwa or Tueth.

5. Strain and store for 3-4 days in the refrigerator.

6. When you want to drink it, add the milk, evaporated milk, sugar, and almonds to the kewha. Heat for 2 to 3 minutes.
