The Different Chai of India and Pakistan "Kashmiri Chai"

KASHMIRI CHAI

Ingredients:

2 Tz Water
2 c ch. green tea Temple of Heaven E URO TE
2 c. ch green tea Sencha E URO TE
9 cardamom berries broken in mortar
1 cinnamon stick (6 cm), chopped
½ tsp salt
¼ baking soda
1 cup cold water
2-3 tbsp sugar (the traditional recipe does not contain sugar)
2-3 cups milk
½ cup Clavel milk (optional)
1 tbsp sliced ​​almonds

Variant

In some regions the following is added to the above:

4 pcs jasmine flowers
1 pc star anise
4 pcs Cloves
    Preparation:

    In a large pot, heat water. Once it boils, add the cardamom and cinnamon. When it reaches a boil again, add the tea and salt.

    Let it boil for 1 minute, add the baking soda

    Let it simmer for 15 minutes (reduce the water by half)

    Add cold water and heat again for 1 minute

    This preparation is called Kehwa or Tueth. (Strain and store for 3-4 days in the refrigerator).

    When you want to drink it, add milk, cloves, sugar and chopped almonds to the kewha and heat for 2-3 minutes.
